Kaitlyn has been in a Popsicle making mood lately after finding a fun Popsicle cook book at the bookmobile. After trying many of the recipes, all of us have declared the lemonade popsicles to be our favorite. She has tweaked the recipe to her own liking but it was inspired by this book:

There are 75 recipes with everything from fruity to coffee to zucchini bread to cookies and cream to spicy. A fun book for kids to cook from all summer. They can make a new kind every day of their summer vacation! They will need minimal help and it’s great practice for trying new recipes. All only need a few ingredients, so if nobody likes them, you’re not out very many ingredients.
Lemonade Popsicle Recipe
- 6 lemons
- 2 Tbs honey
- 1/4 Cup raw organic cane sugar
Cut 5 lemons in half and squeeze the lemon juice out of them into a blender. Holding the last lemon over the blender, grate all the way around it with a cheese grater to make lemon zest. Add honey, sugar, and 3 cups of water. Pulse in the blender for 10 seconds. (Or put all ingredients in a pitcher and stir by hand.) Pour into popsicle molds. Freeze for 5 hours or overnight. Enjoy!!
Popsicle Molds
Here are the molds we use. They are super easy to pull the popsicles out of. Run them under warm water for about 10 seconds and then you can massage the silicone as you pull it out. Easy!
Lemonade Popscicles
Better than a glass of lemonade, these lemonade popsicles are the perfect treat on a hot day. The perfect blend of sweet and sour really hits the spot!
Ingredients
- 6 lemons
- 1 T grated lemon zest (1 lemon)
- 4 T organic raw cane sugar
- 2 T honey
- 3 cups water
Instructions
1. Cut 5 lemons in half and squeeze out the juice into a blender pitcher.
2. Before you cut the 6th lemon, grate the rind into the blender using a cheese grater. (You can do the rind of 2 lemons if you like it.) Then squeeze the juice out of that last lemon.
3. Add sugar, honey, and water.
4. Blend or pulse for about 10 seconds.
5. Pour the lemonade into popsicle molds. Makes about 18 popsicles, depending on your mold size.
Notes
You can also stir the ingredients together if you don't have a blender.
