Healthy Dark Chocolate Fudge Brownies

Ok, I’m not sure if these are truly healthy as in providing vitamins and minerals, but if you want brownies, these are definitely healthier than boxed brownies or other homemade kinds. I really enjoy inventing recipes for treats that substitute healthier ingredients for the not-so-healthy ones.

It’s pretty easy to do. Use organic grass-fed butter or homemade butter from raw milk. Use organic raw cane sugar instead of processed granulated white sugar. For chocolate, use organic dark cocoa powder and chocolate chips. Grab some eggs from your hens instead of store bought. Use whole wheat flour instead of white flour. Substitute sea salt for table salt. Add in flax, hemp and chia seeds.

The result is healthy dark chocolate fudge brownies! These are very rich and fudge-y. They hit the spot when you’re looking for a chocolate treat. They are also filling so you won’t eat more than one. Taste great with air- popped popcorn. Perfect for taking to potlucks, picnics and road trips. Cut and travel better than most brownies.

Healthy Dark Chocolate Fudge Brownies

Ingredients

  • 2/3 cups organic grass-fed butter
  • 1 cup organic raw cane sugar
  • 1/4 cup brown sugar
  • 2 Tbs corn syrup
  • 1 1/2 -2 1/2 cups dark chocolate chips
  • 4 eggs
  • 2 tsp vanilla
  • 1 cup whole wheat flour
  • 1/2 cup unbleached white flour
  • 4 Tbs dark cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 cup combined flax, hemp and chia seeds (optional)

Instructions

  1. Melt butter, sugars, corn syrup, and 1 1/2 cups chocolate chips in a glass bowl in the microwave.
  2. Stir with wooden spoon until blended and smooth.
  3. Add eggs one at a time and beat well with wooden spoon after each one.
  4. Add vanilla.
  5. Put flours, cocoa, baking powder and salt on top of the batter. Stir it together a little bit and then stir it into the batter.
  6. Pour into greased 9" x 13" pan.
  7. Bake at 350°F for 25 minutes.
  8. If desired, when brownies come out, pour 1-2 cups of chocolate chips on top of the brownies. As they melt, spread them out with a knife. Put in the freezer for 15 minutes to harden the chocolate.

Notes: I use a 12 oz bag of chocolate chips. I don’t measure, but put all but the last inch of the bag into the bowl with the butter and sugars to melt. The last inch of chocolate chips I sprinkle on the batter before baking. Most of the time this is the way we eat them. Other times, I open another bag of dark chocolate chips and sprinkle about half of them onto the top of the brownies as soon as they come out of the oven. Then I spread it with a frosting spreader and let it harden– on the counter (if it’s dry and cool in your house) or in the freezer for 15 minutes.

In these pictures I used a 10″ x 10″ pan ( my 9″ x 13″ had a casserole in it) which will make the brownies thicker than a 9″ x 13″. If you use a smaller pan they will need to bake for about 30 minutes.
